The Cancer Woman's Kitchen - Onion and Tomato with Scrambled Eggs

So, this noon I was hungry and my sister didn't cook anything (for reasons I don't know of haha). My mom had cooked fish which I don't eat because I'm vegetarian and the vegetarian dish which my mom cooked was potatoes, the ones which we stuff in Masala Dosa and I hate those. They are the main reason I hate Masala Dosa.

A thought striked me of cooking something for myself. I didn't cook ANYTHING since the previous year's July! Whoa! I don't know how but my Inner Cancer Cook was dead. Even if I felt hungry I chose any of the three options:
1) Let go.
2) Have a snack instead of any meal.
3) SISTER....! Cook me something!
Then I was filled with courage and forced by my recently re-constructed Cancer Cook to go and cook something for me. So here is what I did:

ONION AND TOMATO WITH SCRAMBLED EGGS

Servings:
2 small bowls

Ingredients:

1 Medium Onion
2 Large Tomatoes
1 Egg
1/2 TspSalt
1/4 Tsp Powdered Red Chilli Pepper
2 Pinches sweet or any Paprika
1/2 Tsp Garlic Poweder
1/2 Cup Water
2 Tbsp Olive Oil

Directions:

  1. Finely chop the onion and tomatoes.
  2. Add 1 tbsp Olive Oil in a pan and add the chopped Onion in it.
  3. Add Salt, Red Chilli Pepper, Paprika, Garlic Powder and Water.
  4. Cook until the Onions achieve a state of being semi transparent.
  5. Add Tomatoes and stir after every 10 seconds.
  6. Cook for 3-5 minutes.
  7. Add 1 tbsp Olive Oil in a pan and add the raw egg.
  8. Stir it continuously until it is all broken and scrambled and fully cooked.
  9. Add the scrambled egg as a topping to the Onion and Tomatoes.

It is easy and tasty. You can serve it with roti, bread, in a sandwich or anything you like.
